Salami Strolghino is a product historical for Parma and surroundings. It’s obtained with the precious meat used for Culatello.
The meat is minced and flavored with the characteristic spiciness based on fine aromas and salt; then it is stuffed into a thin casing which allows maturation in a relatively short time. Extremely balanced fat and lean parts. Grind medium.
With a compact consistency and ruby red colour, Salami Strolghino Ferrarini should be cut into diagonal, round, slightly thick slices.
Salami Strolghino is lean and sweet. It is best served cut into thick slices and soft, after only a few days of maturing.
It’s advisable to keep the product in a cool place to preserve the delicate flavour. Once opened, Salami Strolghino can be stored in the refrigerator, wrapping it in cling film; it is recommended to consume it within 2-3 days of opening the package.
