From the Ferrarini’s tradition was born the Mortadella Bologna PGI Antica Rivalta.
Our entire mortadella range is produced using only the most carefully selected meats, free from gluten, lactose and milk protein, and following traditional recipes to the letter. The subtle flavouring and long cooking time give our range of mortadella its characteristic fragrance and unique, delicate taste, ensuring it is truly unmistakeable.
“PGI” (Protected geographical indications) is destined only for the few charcuterie products that respect all conditions and requirements established in the Production Disciplinary. The stricts requirements cover all aspects, like areas of production, raw materials and meat cuts, processing, organoleptic characteristics.
Meat cuts are mainly from the pork’s shoulder, and are carefully selected, minced and mixed with lardon, spices and natural aroma. For the lardons, the tastier cut of the whole pig is used: neck fat. The mixture is then bagged and cooked in particular stoves for several hours. The last phase is the showering one, followed by cooling down.
Mortadella Bologna PGI Antica Rivalta is created following a top-secret recipe, whilst the special cooking method gives the meat its characteristic aroma and trademark softness.
